We are three women united by a deep connection to the land and an unbridled passion for everything that can be preserved in a jar.

We live and work in the Euganean Hills, where we grow, select, and transform fruit and vegetables alongside local farms that share our vision.

Our vision? Innovating tradition.
Through modern methods, real ingredients, and zero shortcuts.

The heart of our work is the workshop, where tradition and technique meet. Preserves, compotes, vegetables in oil, and other wonders of artisanal agriculture come to life thanks to clean processes, balanced recipes, and a great, great focus on quality.

We have chosen to do things with care, even when it takes more time.
The result? Products full of flavor, local heritage, seasonality — and a little bit of us, too.

Selection and sourcing of raw materials

We exclusively process fresh seasonal fruit and vegetables, grown directly on our land or sourced from local farms in the Euganean Hills, with whom we maintain direct and ongoing relationships.

Raw materials are selected at their optimal ripeness, based on visual, organoleptic, and agronomic criteria.

Preparation and processing

Raw materials are washed, peeled, and cut by hand to ensure uniqueness. We follow precise protocols for washing in potable water, disinfection (when necessary), drying, and the treatments required for product preservation (acidification, salting, blanching...).

Cooking and transformation

This is the phase where compotes, purees, chutneys, preserves in oil, and pestos take shape.

We use slow cooking at controlled temperatures to preserve aromas and colors, dosing ingredients according to internally developed recipes.

Jarring occurs while hot (when required), followed by the immediate sealing of the jars with new, food-grade certified lids.

Thermal treatment and safety

All products undergo pasteurization in a water bath.

Every batch is identified and tracked.

Critical parameters are recorded to verify that the temperatures necessary for microbiological stability are reached without altering the product's properties.

Labeling, packaging, and storage

Each product is packed in sterilized glass jars, labeled with mandatory information (ingredients, batch, date, allergens, net weight), and stored in a cool, dry environment using a FIFO rotation.
